Red Butter Sauce Recipe

Ingredients
1/2 cup (125 ml) dry red wine
5 green onions, chopped
1/2 cup (125 ml) 35% cream
8 oz (225 g) butter, at room temperature
Salt and pepper
1 tsp (5 ml) sweet red pepper, very finely chopped
Directions
– In a small saucepan, bring wine and green onions to a boil, and let liquid reduce by half.
– Add cream, stir well and let mixture reduce by half.
– Over very low heat, beat in butter with a wire whisk and keep beating vigorously until the sauce is thick and creamy. Season with salt and pepper. Garnish with sweet red pepper.
