Red Bell Peppers In Garlic Oil Recipe
Ingredients
| Red bell peppers | 4 To taste | |
| Oil | 1/2 Cup (16 tbs) | |
| Garlic | 2 Clove (5gm), crushed | |
| Onion | 1 Small, minced |
Directions
Wash and dry bell peppers and place on the grid over hot coals and cook for 10-12 minutes, turning frequently.
Remove from heat, cool, cut in half, seed, then cut lengthways into thick slices.
Place in a flameproof casserole with oil, garlic and onion and let stand 25-30 minutes to marinate, stirring occasionally.
Place casserole on the side of barbecue to heat through while cooking steak or chops.
Bell peppers can also be cooked in a moderate oven for 10-12 minutes, then marinated and chilled.
