1/2 pound red beans, soaked overnight, drained
1/2 pound pasta
1/4 cup olive oil
1/8 cup white wine vinegar
2 tablespoons fresh lemon juice
Salt and pepper
Oregano to taste (optional)
Sugar to taste
1 10 ounce size package frozen green peas
Parsley for garnish
Directions
Cook the beans in 1 quart fresh water for 1 hour.
Drain.
Be sure that they are not overdone.
Let cool.
Cook the pasta, drain, and chill in cold water.
Prepare dressing of the oil, vinegar, lemon juice, salt and pepper, and oregano if desired.
Add sugar to taste.
Drain the pasta, and place in bowl with beans.
Rinse the defrosted frozen peas, and drain.
Add to the bowl with the dressing, and toss.
Garnish with parsley.
