Rainbow Pepper Pasta Salad Recipe Video
Ingredients
6 ounces farfalle (bow-tie) pasta
1 large red pepper, seeded and chopped
1 large yellow pepper, seeded and chopped
1/2 English cucumber, seeded and chopped
2 tablespoons shallots, peeled and finely chopped
5 ounces feta cheese
2 ounces Kalamata olives, pitted and chopped
1/2 cup basil leaves, chopped
1/2 cup Italian parsley leaves, chopped
1 tablespoon red wine vinegar
2 tablespoons extra-virgin olive oil
Salt and pepper
Directions
Cook pasta in large pot of boiling, salted water, following cooking instructions on package. Drain, rinse with cold water and drain again. In a bowl, mix together remaining ingredients and pasta. Taste, and season with salt and pepper if desired. Cover and refrigerate overnight. Serve cold.
