Red And Green Pepper Salad Recipe
Ingredients
| Green pepper - 1 large, seeded | ||
| Red pepper - 1 large, seeded clove garlic, minced | ||
| Olive oil | 2 Tablespoon | |
| Lemon juice | 1 Tablespoon | |
| Cumin | 1/2 Teaspoon | |
| Cinnamon - pinch | ||
| Green onions | 4 | |
| Tomato | 1 Large, peeled | |
| Mint | 1 Teaspoon, chopped | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
GETTING READY
1. Cut green and red peppers into chunks and place in a large pie plate or bowl.
MAKING
2. Toss the pepper chunks with garlic and oil and microwave, covered, at High for 3 minutes, or until tender-crisp, stirring once.
3. Add lemon juice, cumin and cinnamon and let cool to room temperature.
SERVING
4. Add onions, tomato and mint, season with salt and pepper to taste and serve.
