Recipe Story

David had never tried Sushi until we went to Hawaii a couple of years ago. I started him off with cooked Sushi, and slipped in a raw tuna piece. Shhhh..I don’t think he ever knew! He had a hard time trying it. He said something like, “I can’t believe you people eat that…….stuff.” Now he likes the cooked Sushi that is made fresh at our local H.E.B. store.

Ingredients

Yellow Summer Squash, sliced 1/2″ thick slices

Jalapeno, seeded and sliced 1/2″ thick slices

Hot & Spicy Sausage uncooked, a couple of patties will be plenty.

Shredded Jack Cheese, just enough to mix with sausage

Olive Oil

Directions

Preheat oven to 350F degrees. Mix hot & spicy sausage and shredded jack cheese in a bowl and set aside.

Cut the center of the squash out to fit the jalapeno slice. Insert the jalapeno slice into the center of the squash. Press sausage into the center of the jalapeno and take away any that doesn’t fit into the jalapeno center.

On a cookie sheet lined with foil, place a couple of drops of olive oil where each piece of Real Texas Sushi will be placed. Place the piece of sushi on the olive oil and bake in the oven until sausage is completely cooked.

The ingredient amounts will depend on how many pieces of sushi you want.

Try it! You’ll like my brand of Real Texas Sushi.
