Real Texas Cowboy Corn Casserole Recipe Video
When you are taking the kernels off the corn cob, you can leave the stem on the corn cob to use as a handle, and hold on a cookie sheet. Using a large knife to scrape the kernels off the corn cob.
Ingredients
2 cups fresh Corn
1 small Red Bell Pepper, chopped
1/2 Texas 1015 sweet Onion, chopped
3 medium Jalapenos, minced
1 tablespoon minced Garlic
Salt and Pepper to taste
1/4 cup melted Butter
1/4 cup chopped Texas Pecans
Directions
Preheat oven to 350F degrees. Spray a square cooking dish with oil and set aside.
Mix in a medium bowl all the ingredients except for the melted butter and pecans. Pour into the cooking dish, drizzle melted butter and sprinkle pecans on top.
Bake in oven approximately 30 minutes or until corn is tender and bubbling.
