Perhaps you like to serve small whole tomatoes sometimes as hors-d'oeuvre, raw tomatoes stuffed in various ways, or just with mayonnaise.
Well, here is some useful advice to prevent the stuffing from being spoiled by too much watery tomato juice.
Cut a little lid off each tomato: hollow the inside with a very srriall spoon, taking out the seeds and partitions.
Fill up the hollow tomatoes with vinaigrette sauce , and leave to marinate for 2 hours.
Then, empty and drain the tomatoes on a strainer, before stuffing them—according to your own ideas.
Let them remain in a cool place for an hour before serving.
