Ingredients

 
4 medium tomatoes
 
1 teaspoon dried oregano leaves
 
2 tablespoons red wine vinegar
 
1/4 teaspoon black pepper
 
1 tablespoon fresh chopped parsley

Directions

Cut away the hard section of the tomatoes where their stalks were attached and place the tomatoes in boiling water for 30 seconds.
Remove with a slotted spoon and cool under cold water.
Slide the peel off the tomatoes.
Cut tomatoes in half and squeeze seeds and excess liquid from them.
Place tomatoes, vinegar, parsley, oregano, and pepper in a blender or food processor and process until smooth.
