Raw Mexican Rice Recipe Video

Annmarie has been craving Mexican food since we’ve been in the southwest… So today, she’s going to get her fix with this raw food recipe for Mexican rice. It’s not really rice, but it tastes really good! :-) Take a look…

Ingredients

 
1/4 head of cabbage, shredded
 
1/2 small sweet onion
 
2 TBSP Sun-dried tomato powder (or Fiesta Mole ;-) )
 
1 TBSP extra-virgin olive oil
 
1/2 tsp salt
 
1/4 tsp chili powder or more to liking
 
1/4 tsp cumin
 
1/2 clove garlic
 
1/2 ripe tomato, diced

Directions

Place cabbage in food processor fitted with s blade and pulse until rice like texture

Transfer to large bowl and add, onion, sun-dried tomato powder, oil, salt, chili wder, cumin, onion powder, garlic, and tomato, toss gently.

Can warm if you like in a dehydrator set at 125 degrees for 30 mins to 2 hours.

Serve with ‘Taco Nut Meat‘ sliced avocado on a romaine leaf.
