1 peck (8 quarts) tomatoes
 
6 large onions, finely chopped
 
1 cup salt
 
1 large hot red pepper, finely chopped
 
3 cups finely chopped celery
 
5 ounces mustard seed
 
2 pounds brown sugar
 
5 cups cider vinegar

Directions

Wash, skin and trim tomatoes, then dice.
Mix tomatoes, onions and salt.
Let stand overnight in a crock or a heavy pot.
Drain thoroughly in the morning.
Add pepper, celery, mustard seed, sugar and vinegar.
Mix thoroughly.
Pour into sterilized jars and seal with paraffin.
This zesty chili sauce is a hit with roast beef.
