Raw Vegetable Pinwheel Salad Recipe
Ingredients
2 cups carrots, coarsely grated
2 cups green or white cabbage, finely shredded
2 cups raw beets, peeled and finely grated
2 cups cucumber, peeled, seeded and coarsely grated
1-2 cups fresh sprouts from wheat, soybeans, radishes, etc.
Salad greens for garnish
Directions
Prepare vegetables.
Keep each one separate.
Arrange in clumps or "hills" on a platter which has first been lined with crisp salad greens.
Either keep the sprouts in a clump in the center, or sprinkle them on top of the white cabbage or cucumbers for color.
