Raw Marinade For Game Recipe

Ingredients
1 bottle (4/5 quart) dry red table wine
1/4 cup red wine vinegar
2 large carrots, sliced
2 large onions, sliced
6 shallots or green onions, chopped
1/2 teaspoon each whole peppercorns, whole cloves, juniper berries (optional), and thyme
1 tablespoon salt
3 or 4 sprigs parsley
1 bay leaf
Directions
Combine all ingredients.
Pour over the meat, cover with foil, and keep cool.
Turn meat several times.
Small pieces of meat are usually marinated for 24 hours, larger pieces for 2 or 3 days.
If the marinade completely covers the meat, turning is not necessary.
Some cooks pour a little oil on top of the marinade to seal out the air.
