Ingredients

 
1 small head cauliflower, thinly sliced
 
3 unpeeled red apples, diced
 
1 cup sliced celery
 
3 small green onions, sliced
 
3/4 cup chopped parsley or 1 small bunch watercress, chopped
 
1 clove garlic
 
1/2 teaspoon salt
 
1/4 cup red wine vinegar
 
1/4 cup salad or olive oil
 
Pepper to taste

Directions

Chill cauliflower, apples, celery, onions, and parsley or watercress thoroughly so they are very crisp.
Rub salad bowl with cut clove of garlic and salt.
Shake vinegar, oil, and pepper vigorously in a tightly covered jar.
Pour over salad and toss lightly.
Taste for seasonings.
