Ravigote' Sauce For. Mussels Or Clams Recipe
Ingredients
| Butter | 2 Tablespoon | |
| Flour | 1 Tablespoon | |
| 1/2 can beef consomme | ||
| Egg yolks | 2 , beaten | |
| Mustard | 1/2 Teaspoon | |
| Lemon juice | 2 Tablespoon | |
| 6 scallions or chopped green onions | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Melt the butter and blend in the flour and slowly add the consomme.
Cook until it thickens stirring constantly.
Keep hot in the top of the double boiler until ready to serve.
Then add beaten egg yolks quickly and add the chopped scallions or onions.
