Ratatouille With Red Wine Recipe
Ingredients
1 medium eggplant, diced
1 cup chopped onion
3 cups sliced yellow summer squash
1 large green bell pepper, seeded and diced
1 cup peeled, sliced cucumber
2 cups fresh or low-sodium canned chopped tomatoes
1/2 cup low-sodium tomato puree or tomato paste
1 garlic clove, crushed
1 cup red wine or red grape juice
1 teaspoon sugar
1 teaspoon dried basil leaves
Pinch of cayenne pepper
Directions
Place eggplant, onion, squash, green pepper, cucumber, tomatoes, tomato paste or puree, garlic, red wine or grape juice, sugar, basil, and cayenne pepper in a large, heavy saucepan.
Simmer over low heat for 40 minutes or until vegetables are tender.
