Ingredients

 
2 eggplants
 
Little coarse salt
 
About 1/2 cup olive oil
 
1 onion, peeled, chopped
 
1 large red pepper, seeded, cut into small pieces
 
4 tomatoes, peeled, chopped
 
2 cloves garlic, crushed
 
12 coriander seeds
 
Chopped basil or parsley

Directions

Wipe and peel eggplants; cut into 1/2 inch squares.
Put into colander; sprinkle with salt; let drain.
Heat some oil in skillet; saute onion about 10 minutes, until it begins to soften.
Add a little more oil; put in eggplant and red pepper.
Cover; simmer 30 to 40 minutes.
Add tomatoes, garlic, and coriander; cook until tomatoes are soft and mushy, adding a little more oil if necessary.
Adjust seasoning; chill.
Drain off excess oil; sprinkle with basil.
