Ratatouille Recipe

Ingredients
1/4 cup olive or salad oil
2 medium onions, thickly sliced
1 clove garlic, finely chopped
1 large green pepper, cut in strips
1 medium eggplant, peeled and cut into 1/2 -inch cubes (about 1 1/2-pounds)
2 medium zucchini, cut into 1/4 -inch slices (about 1 1/2-pounds)
3 to 4 large tomatoes, peeled and cut in wedges, or 1 can (16-ounces) tomatoes
2 teaspoons basil
2 teaspoons parsley flakes
1 teaspoon marjoram
1 teaspoon salt
1/8 teaspoon pepper
Directions
Combine olive oil, onion, garlic and green pepper in 3-quart casserole.
Microwave 4 to 5 minutes on HIGH, or until onions are transparent.
Mix in eggplant and zucchini.
Cover.
Microwave 4 to 5 minutes on HIGH, or until eggplant softens.
Gently stir in tomatoes, basil, parsley, marjoram, salt and pepper.
Microwave 10 minutes on '6', or until vegetables are tender.
For ovens without solid state heat control, Microwave 12 minutes on '5'.
