Ratatouille Recipe
Ingredients
| 2 Spanish onions | ||
| 2 green or red peppers | ||
| Aubergines | 2 | |
| Baby marrows | 2 | |
| 1 tab. chopped parsley | ||
| Pinch of marjoram and basil | ||
| Clove of garlic, chopped finely | ||
| Olive oil about 4 or 5 tabs. | ||
Directions
Slice onion finely and cook in the oil.
Remove seeds and stalks from peppers.
Chop with baby marrows and aubergines and add to onion.
Season with salt and pepper.
Cover pan and cook slowly for about 30 minutes.
Add herbs and garlic.
Cook a further 10 minutes.
Drain off surplus oil.
