Directions

Pour the oil into an 8-cup (2 L) microwave-safe dish.
Microwave at HIGH 2 minutes.
Add the garlic and onions, stir well.
Microwave 3 minutes at HIGH.
Stir.
Add the eggplants, zucchini and green peppers, stir well.
Microwave 3 minutes at HIGH.
