Directions
Microwave at HIGH 2 minutes.
Add the garlic and onions, stir well.
Microwave 3 minutes at HIGH.
Stir.
Add the eggplants, zucchini and green peppers, stir well.
Microwave 3 minutes at HIGH.
Add the remaining ingredients, stir until well mixed.
Cover and microwave at MEDIUM 8 to 9 minutes.
Let stand 10 minutes.
Stir.
Serve hot or pour into a ceramic dish, cover when cooled and refrigerate.
