Ingredients

 
1 medium eggplant, sliced
 
2 onions, thinly sliced
 
4 small zucchini, sliced
 
2 tomatoes, peeled, seeded and cut into wedges
 
2 green peppers, seeded and sliced into rings
 
2 cloves garlic, pressed
 
1/2 cup olive oil
 
1 tablespoon fresh basil or 1 teaspoon dried basil
 
Salt and freshly ground pepper

Directions

Use a large skillet, or cut 6 to 8 ample squares of heavy duty aluminum foil, depending on the number of diners.
Combine ingredients in skillet and cover, or divide the ingredients equally between the foil squares.
Seal tightly.
Serve hot or cold with beef, fish, chicken or lamb—it's even served with eggs.
