Ratatouille Recipe

Ingredients
1 egg plant
4 zucchini
1 large can Italian plum tomatoes
1/8 cup Planters Peanut Oil
2 onions diced
7 fresh mushrooms, sliced
1 lb. ground round steak
2 cloves fresh garlic, pressed
1 bay leaf
Salt and pepper oregano
1 tub sour cream
2 cups rice
1 can chicken broth
Directions
In a frypan, saute the meat, onion and garlic in the oil.
When meat is brown, remove mixture to large casserole.
Add all the vegetables (uncooked), the tinned tomatoes and seasoning, mixing thoroughly.
Cover the casserole and cook on top of stove for 30-40 mins.
Before serving, top with sour cream.
While Ratatouille is cooking, boil rice in chicken broth in covered saucepan until rice is done and broth is absorbed.
