Simple Zucchini Ratatouille With Pepper Recipe
Ingredients
| Eggplant | 1 Medium, diced | |
| Garlic | 1 Clove (5gm), minced | |
| Onion | 1 Small, thinly sliced | |
| Olive oil | 2 Tablespoon | |
| Green pepper | 1 To taste, sliced | |
| Zucchini | 1 Medium, sliced | |
| Salt | 1 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Oregano | 1/2 Teaspoon | |
| Stewed tomatoes | 1 Can (10oz) |
Directions
In 3 qt glass casserole microwave (high), covered, eggplant, garlic, onion and oil 4 minutes.
Stir in green pepper and zucchini.
Combine salt, pepper, oregano and tomatoes, pour over vegetables.
Microwave (high), covered, 8-10 minutes.
Rest, covered, 5 minutes.
Stir in green pepper and zucchini.
