Simple Ratatouille With Eggplant And Zucchini Recipe
Ratatouille is an amazingly delicious side dish. Serve this Ratatouille dish; I am sure you will always be tempted to prepare this for every party!
Ingredients
1/4 cup (60 mL) olive or vegetable oil
2 garlic cloves, chopped fine
2 medium-sized onions, thinly sliced
2 medium-sized eggplants, cut into fingers
6 medium-sized zucchini, unpeeled, thinly sliced
2 green peppers, diced
2 tsp (10 mL) salt
1 tsp (5 mL) thyme
1 tsp (5 mL) sugar
1/2 tsp (2 mL) basil
Directions
€¢ Pour the oil into an 8-cup (2 L) microwave-safe dish. Microwave at HIGH 2 minutes.
€¢ Add the garlic and onions, stir well. Microwave 3 minutes at HIGH. Stir.
€¢ Add the eggplants, zucchini and green peppers, stir well.
€¢ Microwave 3 minutes at HIGH.
€¢ Add the remaining ingredients, stir until well mixed.
€¢ Cover and microwave at MEDIUM 8 to 9 minutes. Let stand 10 minutes. Stir.
