Ingredients

 Garlic2 Clove (5gm)
 Onion1
 Cooking or olive oil - 1/2 cup
 Eggplant1 Medium, diced
 Zucchini3 Medium, sliced
 Green pepper1 To taste
 Italian-style tomatoes - 3 1/2 cups (one 29-ounce can)
 Dried oregano1 Teaspoon
 Salt1 To taste
 Pepper1 To taste

Directions

MAKING
1) In a skillet, saute the garlic and onion in oil, until transparent.
2) Add the diced eggplant and toss well.
3) Stir in the zucchini and pepper and saute for 10 minutes.
4) Stir in rest of the ingredients, cover and simmer for 30 minutes.
5) Then uncover and simmer for another 30 minutes.

SERVING
6) Serve the Ratatouille immediately on serving plates.
