Ratatouille Recipe

Ingredients
3 tablespoons olive oil
2 small onions, cut into eighths
2 cloves garlic, finely diced
1 large green pepper, cut into 1 inch cubes
2 medium zucchini, cut into 1/4 inch slices
10 large mushrooms, sliced
1 medium eggplant, cut into 1 inch cubes
4 large tomatoes, quartered 1 teaspoon salt
1/4 cup grated Parmesan cheese
Directions
In glass casserole, cook olive oil on high (9) for 2 1/2 minutes or until hot.
Stir in onion, garlic and green pepper.
Cover; cook on high (9) for 6 minutes or until onion is transparent, stirring twice during cooking.
Add zucchini and mushrooms, cover, continue cooking on high (9) for 4 minutes.
Add eggplant, cover, continue cooking on high (9) for 6 minutes.
Stir in tomatoes and Parmesan cheese.
Cover; continue cooking on high (9) for 2 minutes or until tomatoes are hot.
Stir in onion, garlic and green pepper.
Cover; cook on high (9) for 6 minutes or until onion is transparent, stirring twice during cooking.
