Raspberry Jam From Green Tomatoes Recipe
|5 cups ground or finely chopped green tomatoes|
|Sugar||5 Cup (16 tbs)|
|Lemon juice||1/4 Cup (16 tbs)|
|1 package (10 ounces) frozen raspberries (optional)|
Mix tomatoes, sugar, and lemon juice; boil 5 minutes, stirring often. Remove from heat; add jell-O and stir until dissolved. Pour into scalded glasses or jars. Seal with melted wax or canning lids, processing about 5 minutes in boiling water bath to assure sterile seal if canning jars are used. If frozen raspberries are used, add after tomato mixture has boiled 5 minutes; then boil an additional 2 minutes. This jam seems thin as poured, but it thickens on standing. Once opened, store jam covered in refrigerator.
