Raspberry Balsamic Chicken Recipe
Ingredients
1 teaspoon vegetable oil
1/2 cup chopped red onion
4 (4-ounce) boneless skinless chicken breasts
1/2 teaspoon salt
1 1/2 teaspoons minced fresh thyme
1/3 cup seedless raspberry preserves
2 tablespoons balsamic vinegar
1/4 teaspoon pepper
Directions
Heat the vegetable oil in a large nonstick skillet over medium high heat.
Saute the onion in the hot oil for 5 minutes.
Season the chicken with half the salt and the thyme, and add to the onion in the skillet.
Cook for 6 minutes on each side or until cooked through.
Remove chicken from skillet; keep warm.
Reduce heat to medium and combine the remaining salt, raspberry preserves, vinegar and pepper in the skillet; heat until preserves melt, stirring constantly.
Spoon the raspberry sauce over the chicken and serve immediately.
