| DUMPLING DOUGH | ||
| All purpose flour | 1 1/2 Cup (16 tbs) | |
| Baking powder | 2 Teaspoon | |
| Salt | 1/4 Teaspoon | |
| Light cream | 3/4 Cup (16 tbs) | |
Directions
1. Prepare berries: In 9-inch cast-iron skillet, combine raspberries, sugar, water, lemon juice, and the cinnamon.
2. Prepare dumpling dough: In medium bowl, combine flour, sugar, baking powder, and salt. Add cream, stirring just until mixture forms soft dough.
3. Cover skillet and heat berry mixture to boiling over medium heat. Reduce heat to medium-low. Drop tablespoons of dough on top of fruit. Cover and simmer until dumplings are set and tops are dry when tested with fingertip, about 15 minutes. Serve hot or warm.
