Raspberry and Lime Cheesecake Quick Bites Recipe Video
These individual bites are just like cheesecake but lighter. If you
can€™t find strained Greek-style yogurt, use equal amounts cream
cheese and cottage cheese rather than regular yogurt.
Ingredients
1 cup low fat cottage cheese
8 ounces light cream cheese
1/2 cup nonfat Greek (strained)
yogurt
1/3 cup granulated sugar
Zest from 1 lime
Juice from 1 medium lime
2 large eggs
16 raspberries
8 low-fat graham crackers
broken into 16 squares

Directions
Night Before
Let all cold ingredients stand at room
temperature 30 minutes. Drain cottage cheese
in a sieve to remove extra moisture. Cut two
8 x 15 sheets of parchment paper. Line a
9 x 9 baking pan with one sheet of parchment,
folding back overhang over side of pan. Lay
the second sheet of parchment across the first
in the opposite direction. Place raspberries in
pan, evenly spacing them across the bottom.
Preheat oven to 350º.
In food processor, pulse cottage cheese
until smooth, about 1 minute. Add cream
cheese and pulse again until well combined.
Add yogurt, sugar, lime zest, and lime juice;
process until smooth. Add eggs one at a time,
processing well after each addition. Pour into
prepared pan. Place square pan in roasting
pan and pour in enough hot water to come
half way up sides of square pan. Bake 25 to
30 minutes until set in center. Remove square
pan from water bath and let cool on wire rack;
cover and refrigerate overnight.
Game day
Slice cheesecake into 16 equal squares.
Remove squares and place one square on top
of each graham cracker. Serve immediately.
