1-1 1/2. lbs (455-683 g) chicken breasts, skinless, boneless
 
1/4 cup (60 ml) plus
 
3 tbs (45 ml) Queen of Hearts Premium Raspberry Vinegar
 
1/4-1/3 cup (60-80 ml) mayonnaise
 
1/4 cup (60 ml) red onion
 
1/4 cup (60 ml) red pepper
 
1/2 lb (230 g) mixed salad greens berries, kiwi, avocado wedges or orange slices, for garnish

Directions

Place chicken breasts in heavy skillet, drizzle 1/4 cup vinegar over them and poach for about 7 minutes on each side.
Cool.
Break into bite-size pieces, drizzle with 2 tbs vinegar, add mayonnaise, onions and pepper.
