1 Preheat the oven to 425° F./ gasmark 7
2 Lightly grease a baking tray.
3 In a bowl, sieve together dry ingredients.
4 Rub fat into the flour until the mixture resembles fine breadcrumbs.
5 Add the milk to the mixture.
6 Mix to a soft but not too wet dough, using a palette knife.
7 Put the dough on to a ready floured board.
8 Knead, very lightly until it is completely smooth.
9 Roll out the dough to roughly 1/4 inch in thickness.
10 Cut it into rounds.
11 Put a spoonful of jam on each.
12 Dampen the edges, and fold them inwards to cover the jam.
13 Put the buns on the prepared tray, seam side down.
14 Slit the top of each bun.
15 Bake them in a hot oven for 20 minutes.
16 Allow to cool on the rack.
17 Serve as desired.
