Ranch House Beans Recipe
Ingredients
| Pinto beans | 4 Cup (16 tbs), drained | |
| Water | 8 Cup (16 tbs) | |
| Salt pork | 1/2 pound | |
| 2 to 4 tablespoons chili powder, depending on taste | ||
| Hot pepper sauce | 1/2 Teaspoon | |
| Salt | To Taste | |
Directions
Bring beans and water to a boil.
Remove from heat, cover, and let stand for 1 hour.
Add salt pork and simmer, covered, for 1 1/2 to 2 hours, or until beans are tender and water is almost absorbed.
While beans are cooking, remove scum from top and stir occasionally.
Remove salt pork and stir in enough chili powder, hot pepper sauce, and salt to give beans a spicy flavor.
Beans can be prepared ahead of time and reheated.
