Raisin Rounds Recipe

Ingredients
Seedless raisins - 1 cup
Honey - 1/3 cup
Orange juice - 1/3 cup
Orange rind - 1 teaspoon, grated
Butter - 1 tablespoon
Shortening - 1/2 cup
Sugar - 1 cup
Eggs - 2
Vanilla - 1 teaspoon
Sifted flour - 2 cups
Baking powder - 2 1/2 teaspoons
Salt - 1/2 teaspoon
Directions
GETTING READY
1) Preheat the oven at 400°F.
MAKING
2) In a saucepan, combine the raisins, honey, orange juice, and rind.
3) Gently cook for about 5 minutes, stirring constantly.
4) Blend in the butter and then cool.
5) Combine and cream the shortening and sugar, till light and fluffy.
6) Beat in the eggs and vanilla.
7) Sift together the flour, baking powder, and salt.
8) Stir into the creamed mix and blend well till a soft dough.
9) Refrigerate.
10) On a lightly-floured board, roll the dough out to 1/8-inch thickness.
11) Cut into 2-inch rounds.
12) Arrange half the rounds on an ungreased baking sheet.
13) Add over the raisin mix and spread evenly.
14) Cut small holes in the remaining circles.
15) Arrange over the filling.
16) Using a fork, seal the edges together.
17) Place in the oven at 400°F and bake for 10 to 12 minutes.
