Raisin Mumbles Recipe

Ingredients
Filling:
3 tblspns, cornflour
1/2 -cup sugar
1 cup water
1 lb. seedless raisins
4 tblspns, lemon juice
grated rind of 1 lemon
Directions
Place all ingredients in a saucepan and cook over low heat, stirring constantly until raisins are plump and the mixture thickens.
Leave to cool.
Sift together the flour, baking powder and salt.
Cream the butter and sugar well together.
Add sifted mixture, then oats.
NOTE: This is a dry, crumbly mixture.
Grease a square cake tin.
Press half the mix- ture evenly over the bottom of the tin.
Cover with cooled raisin filling.
Then put remaining crumb mixture over the top.
Bake at 400° F for about 20 — 25 minutes.
Cut into squares while still hot.
Leave in tin to cool.
Leave to cool.
