Raisin Cookie Strips Recipe
My kids love raisins, which is why i keep a stock of Raisin Cookie Strips! A delicious combination of raisins, peanut butter and a hint of cinnamon, these cookies are relished by adults and kids alike. Here is the recipe...I'm sure you will need to stock up too!
Ingredients
Shortening - 1/3 cup
Sugar - 1/3 cup
Honey - 3 tablespoons
Peanut butter - 3 tablespoons
Egg - 1
Milk - 1 tablespoon
Sifted flour - 1/2 cup
Salt - 1/4 teaspoon
Mace - 1/4 teaspoon
Cinnamon - 1/2 teaspoon
Baking powder - 3/4 teaspoon
Seedless raisins - 1/3 cup
Quick-cooking oats - 2/3 cup
Honey - 1 tablespoon
Melted butter - 1 teaspoon
Directions
GETTING READY
1) Grease an 8-inch-square pan.
MAKING
2) Combine and cream the shortening and sugar till light and fluffy.
3) Add in the honey and peanut butter and continue beating.
4) Beat in the egg and milk.
5) Combine and sift the flour, salt, mace, cinnamon and baking powder.
6) Stir into the shortening mix.
7) Stir in the raisins and oats.
8) Spread in the square pan.
9) Combine honey and melted butter and pour evenly over the dough.
10) Place in the oven at 375° F and bake for 15 minutes.
SERVING
11) Cut into strips and serve.
