Raisin Chocolate Pie Recipe

Ingredients
1 cup raisins
2 1/4 cups milk, scalded
1/2 teaspoon salt
1 cup sugar, divided
1/4 cup cocoa
1/4 cup cornstarch
2 eggs, separated
2 tablespoons cold water
2 teaspoons vanilla
1 9-inch baked pie shell
Directions
Boil raisins 5 minutes in water to cover; drain well and set aside.
Scald milk in top of double boiler.
Combine salt, 1/2 cup sugar, cocoa and cornstarch and blend thoroughly.
Add slowly to scalded milk, stirring to prevent lumping.
Beat together egg yolks and water.
Pour the hot mixture slowly over egg yolks and mix well.
Return mixture to double boiler and cook over hot water until thick and clear, stirring occasionally.
Remove from heat.
Cool and fold in vanilla and/aisins.
Pour into baked pie shell.
Beat egg whites until stiff but not dry.
Add sugar gradually, beating until mixture stands in peaks.
Pile over pie filling.
Bake in a hot oven (425° F) 5 to 10 minutes or until meringue is lightly browned.
Makes one 9-inch pie.
