Raisin Bran Wheat Muffins Recipe

Ingredients
1 cup wheat bran 250 mL
1 cup buttermilk 250 mL
1/2 cup raisins 125 mL
1/2 cup honey 125 mL
1/4 cup molasses 50 mL
1/3 cup butter, melted or vegetable oil 75 mL
2 eggs
1 tsp vanilla 5mL
2 cups whole-wheat flour 500 mL
1 tsp baking powder 5mL
1 tsp baking soda 5mL
1/4 tsp cinnamon lmL
Pinch salt
Directions
In a small bowl, combine bran, buttermilk and raisins.
Set aside to soak.
In another bowl, whisk together honey, molasses, butter, eggs and vanilla.
Add bran mixture.
In another bowl, sift together flour, baking powder, baking soda, cinnamon and salt.
Add to liquid ingredients, stirring just until blended.
Do not overmix.
Spoon batter into prepared muffin tin, filling cups to the top.
Bake in preheated oven for 20 to 25 minutes.
HINT: Use baking soda to remove coffee and tea stains from plastic cups and dishes.
