Raisin Stuffed Cornish Game Hens With Apples Recipe

The raisin stuffed cornish game hens with apples is a fruited hens recipe. Oven cooked, the hens are prepared with a filling of stuffing mix along with raisins and walnuts flavored with cider. Ingredients

 
1 envelope Onion Recipe Soup Mix
 
1 1/4 cups apple cider or juice
 
2 cups unseasoned cube stuffing mix
 
1/3 cup raisins
 
1/3 cup coarsely chopped walnuts
 
4 Cornish hens (1 to 1 1/2 pounds each)
 
2 large apples, cored and halved
 
1/4 cup brown sugar
 
1/2 teaspoon ground cinnamon

Directions

Preheat oven to 375°.
In medium bowl, blend onion recipe soup mix with cider.
Pour 1/2 mixture into medium bowl; stir in stuffing mix, raisins and walnuts.
Stuff hens with raisin mixture; secure cavities with poultry pins or skewers.
In shallow baking pan, arrange hens and apples.
To remaining cider mixture, blend in sugar and cinnamon; brush hens and apples with 1/2 mixture.
Bake, brushing occasionally with remaining glaze mixture, 1 hour or until hens are done.
To serve, on large serving platter, arrange hens and apples, sliced.
