Raisin Spice Cake Recipe

Ingredients
1/2 cup (1 stick) butter or margarine,softened
1 cup firmly packed brown sugar
1 egg
2 cups all purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
3/4 cup cooled coffee
1 cup raisins
1/4 cup 10X (confectioners' powdered) sugar
1 tablespoon lemon juice
Directions
1. Beat butter or margarine, brown sugar and egg in the large bowl of electric mixer at medium speed, until well blended and fluffy.
2. Sift flour, baking powder, salt, cinnamon, nutmeg and cloves onto wax paper. Turn mixer speed to very low; add sifted dry ingredients, alternately with coffee. Mix just until blended. Stir in raisins. Turn batter into a greased 9x9x2-inch baking pan.
3. Bake in moderate oven (350°) 40 minutes, or until center of cake springs back when lightly pressed with fingertip. Cool in pan on wire rack.
4. Combine 10X sugar and lemon juice in a small bowl; add a few drops of water, if necessary, to make a spreading consistency. Spread over top of cake while still warm. Frosting will form a thin glaze.
