Raisin Pie Recipe
Ingredients
1 9-inch BASIC ROLLED PIE CRUST prepared in advance but not baked
1 1/4 cup raisins or dried currants
2 cups orange juice
1 egg, well beaten
1/4 cup warmed honey (less, if using raisins)
Juice of 1 lemon
1 tablespoon grated lemon rind
1/4 teaspoon salt
4 tablespoons whole wheat flour
Directions
Preheat oven to 450° F.
In a heavy saucepan, combine fruit and orange juice.
Place over medium heat and cook slowly for 15 minutes.
Turn off heat and allow fruit to steep, covered, for another 15 minutes.
Combine egg, honey, lemon juice and rind, salt, and flour.
Mix well and add to fruit mixture in saucepan.
Cook slowly for about 10 minutes until thick and smooth.
Cool.
Pour filling into pastry-lined pie pan and bake in preheated oven for 10 minutes, then reduce heat to 350° F.and bake another 25 minutes.
