Raisin Oatmeal Cookies Recipe
Ingredients
1 cup all-purpose flour
1 tsp ground cinnamon
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup solid margarine, softened (1 stick)
2 tsp granulated fructose
1 large egg
1 tsp vanilla extract
1 cup granulated sugar replacement
1 14 cup quick-cooking oatmeal
1/2 cup raisins
Directions
Combine flour, cinnamon, baking powder, baking soda, and salt in a bowl.
Stir to mix.
Combine margarine, fructose, egg, and vanilla in a mixing bowl.
Beat until thoroughly blended.
Beat in sweetener.
Gradually add flour mixture.
Beat until blended.
Meanwhile, combine oatmeal and raisins in a bowl.
Work with your fingers or a spoon to separate the raisins and coat them with the oatmeal.
Beat into cookie mixture.
Drop by tablespoonfuls onto an ungreased cookie sheet.
Bake at 375°F (190°C) for 10 to 12 minutes.
Cool slightly on cookie sheet; then move to cooling rack.
