Raisin Nut Health Bread Recipe
Ingredients
1 1/2 teaspoons baking powder
1 teaspoon salt
2 1/2 cups sifted self-rising flour or 2 1/2 cups all-purpose flour sifted with 2 1/2 teaspoons baking powder
1/2 cup soy flour
1/3 cup sugar or 14 cup honey
2 tablespoons butter, or margarine
1 cup milk
1 egg, lightly beaten
2/3 cup seedless raisins
1/2 cup chopped nuts
Directions
Grease and line a Iarge 9x5x3-inch loaf pan.
Sift the baking, powder, salt, flour, soy flour and sugar into a large bowl and rub in the butter or margarine until the mixture resembles fine breadcrumbs.
In another bowl mix together the milk, egg and honey (if using in place of sugar).
Add the liquid ingredients, the raisins and the nuts to the dry ingredients and mix well together.
Spoon into the prepared pan and level the top.
Bake in the center of a moderate oven (350°F) for about 1 hour until firm to the touch.
Turn out onto a cake rack to cool.
