Raisin Mini Scones Recipe
Ingredients
| Margarine | 2/3 Cup (16 tbs), melted | |
| 1-1/2 cups quick-cooking oats | ||
| Egg substitute equivalent to 2 eggs | ||
| Vanilla extract | 1 Teaspoon | |
| Artificial sweetener equivalent to 1 cup sugar | ||
| All purpose flour | 1/2 Cup (16 tbs) | |
| Baking powder | 1 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Skim milk | 1/2 Cup (16 tbs) | |
| Raisins | 1/2 Cup (16 tbs) | |
Directions
In a large bowl, combine margarine and oats.
Stir in egg substitute, vanilla and sweetener.
Combine flour, baking powder and salt; add to oat mixture alternately with milk.
Stir in raisins.
Drop by rounded tablespoonfuls onto baking sheets coated with nonstick cooking spray.
Bake at 400° for 12-15 minutes or until browned.
