Raisin Filled Sweet Potatoes Recipe

1 17-ounce can sweet potatoes, drained
 
2 tablespoons butter, softened
 
1 egg
 
1/2 teaspoon salt
 
Dash ground cinnamon
 
Dash ground ginger
 
2 tablespoons butter, melted
 
1/4 cup sugar
 
2 teaspoons cornstarch
 
1 teaspoon finely shredded orange peel
 
1/2 cup orange juice
 
1/2 cup raisins

Directions

Beat together drained sweet potatoes, the softened butter, egg, salt, cinnamon, and ginger.
Spoon into 6 mounds on a greased baking sheet.
Make depressions in centers with spoon.
Brush with the melted butter.
Bake at 350° for 15 to 20 minutes.
In saucepan combine sugar, cornstarch, and peel.
Stir in orange juice and raisins.
Cook and stir till thickened and bubbly.
