Raisin Cake Recipe

Ingredients
10 tablespoons butter
3/4 pup sugar
Grated rind of 1 lemon
3 eggs
2 cups flour
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup raisins
Powdered sugar
Directions
In a bowl, cream the butter until soft.
Add the sugar and beat until the mixture is light and fluffy.
Beat in the lemon rind and add the eggs 1 at a time, beating well after each addition.
Sift together the flour, baking powder and salt and add to the butter-egg mixture.
Mix lightly and fold in the raisins.
Spoon the batter into a buttered and floured loaf tin.
Bake the cake in a preheated 300° oven for 1 to 1 1/4 hours or until the cake tests done.
Let it cool in the pan for 5 minutes then turn out of the pan to cool further on a wire rack.
Sprinkle the top with powdered sugar.
