Raisin Applesauce Bran Muffins Recipe
Ingredients
| 1 1/2 cups shreds of wheat bran cereal | ||
| Unsweetened applesauce | 3/4 Cup (16 tbs) | |
| 1/2 cup nonfat buttermilk | ||
| Firmly packed brown sugar | 1/4 Cup (16 tbs) | |
| Egg substitute | 1/4 Cup (16 tbs), frozen | |
| Vegetable oil | 2 Tablespoon | |
| All purpose flour | 1 1/4 Cup (16 tbs) | |
| Baking powder | 2 Teaspoon | |
| Salt | 1/4 Teaspoon | |
| Ground cinnamon | 1/2 Teaspoon | |
| Raisins | 3/4 Cup (16 tbs) | |
| Vegetable cooking spray | ||
Directions
Combine first 3 ingredients; let stand 5 minutes.
Add brown sugar, egg substitute, and oil; stir well.
Combine flour, baking powder, salt, and cinnamon; make a well in center of mixture.
Add cereal mixture, stirring just until dry ingredients are moistened.
Fold in raisins.
Spoon batter into muffin pans coated with cooking spray, filling three-fourths full.
Bake at 400° for 20 minutes or until lightly browned.
