 Flour10 Ounce
 2 gills milk
 Butter3 Ounce
 2 oz. white bread crumbs
 Eggs4 standard
 Yeast1/2 Ounce
 Vanilla sugar package1
 Sugar4 1/2 Ounce
 Rum1 Tablespoon
 Walnuts2 Ounce

Directions

Make a batter of the yeast, one lump of sugar, 1 tbsp. warm milk and a little flour.
Sift 1/2 lb. flour into a basin, make a well in middle and put the leavened batter into it.
Dredge with flour and let it rise a little.
Cream the yolks of two eggs with 1 oz. castor sugar and rum.
With a wooden spoon mix the flour and the batter with enough warm milk to make a dough.
Combine with the creamed mixture and 1 oz. butter, and continue mixing with the wooden spoon until the dough blisters and leaves spoon clean.
Then dredge with flour, cover with clean cloth and set it in a warm place to rise.
When risen, turn onto floured pastry board, roll out to the thickness of a finger and stamp out pieces the size of a walnut with pastry cutter.
Turn each piece in melted butter and arrange close to each other in a tin, greased with butter and dusted with fine breadcrumbs.
Sprinkle ground walnuts mixed with sugar between the rows.
Brush top with beaten egg, let it rise again and bake in a moderate oven.
