Rainforest Bars Recipe
Ingredients
| Butter | 3/4 Cup (16 tbs) | |
| Brown sugar - 1/2 cup packed | ||

| Vanilla | 1 Teaspoon | |
| All-purpose flour - 2 cups | ||
| Brown sugar - 1 cup packed | ||
| Eggs | 3 | |
| All-purpose flour - 3 tablespoon | ||
| Salt | 1/4 Teaspoon | |
| Brazil nuts | 2 Cup (16 tbs), chopped | |
| Coconut | 1 Cup (16 tbs), shredded | |
Directions
GETTING READY
1. Preheat oven to 350° Fahrenheit.
2. Lightly grease a 13x9x2 inch baking pan with butter; keep aside.
MAKING
3. In a medium mixing bowl, using an electric mixer, beat butter at medium speed for 30 seconds.
4. Beat in ½ cup sugar; scraping sides to combine well.
5. Add egg yolk and 1 teaspoon vanilla; beat until well combined.
6. Add 2 cups flour and beat well.
7. Into an ungreased 13x9x2-inch baking pan, place dough and press to line bottom evenly.
8. Bake in preheated oven for 10 minutes.
9. Remove pan to a wire rack and let cool for 5 minutes.
10. In the meantime, in a large mixing bowl, put together 1 cup brown sugar, eggs, and 1 teaspoon vanilla; using an electric mixer; beat until ingredients are well combined.
11. Beat in 3 tablespoons flour and salt until combined.
12. Add Brazil nuts and coconut; stir to mix.
13. Over the baked crust, spread nut mixture and bake for another 20 minutes until centre is set.
14. Remove pan to a wire rack and let cool completely.
15. Cut into bars and store covered in refrigerator.

16. Serve chilled Rainforest Bars alone as snack.
