Rainbow Cassata Recipe

This Rainbow Cassata will mesmerize any eater, be it fussy or easy. I just love Dessert recipes and this dish is my only favorite amongst them. Stop looking and just try this yummy Rainbow Cassata recipe and you'll never ask for anything else.

Ingredients

 
1 tray chocolate ice cream
 
1/2 tray vanilla ice
 
1/2 tray strawberry ice cream cream
 
1/2 tray lime ice cream
 
1 cup cake crumbs
 
2 tblspns, melted butter
 
1/4-tspn. cinnamon
 
2 tblspns, fruit juice
 
1/4-tspn. mixed spice
 
1/4-cup chopped red glace cherries
 
1/4-cup chopped angelica
 
1/4-cup chopped orange and lemon peel
 
1/4-cup chopped almonds, walnuts
 
or peanuts

Directions

Combine cake crumbs, melted butter, spices and fruit juice.
Beat partially with frozen ice cream.
Stir angelica and almonds into straw- berry ice cream, cherries and peel into lime.
Return to freezer and freeze until solid.
To assemble dessert: Spread chocolate ice cream over base and sides of mould, then a layer of vanilla ice cream, a layer of strawberry, then lime, and finally the cake crumb mixture.
The mould is then placed in the freezer and left for at least 1 hour
